Coconut Milk

Ingredients:
- 1/4 cup unsweetened coconut flakes
- 1/2 cup boiling water
Directions:
- Blend together until coconut is finely ground.
- Strain through a fine sieve or a piece of clean muslin.
- Squeeze to extract all the liquid.
Makes about 1/2 cup.
